Dear Future Self,
For the past several days, I have been basking in a lesser homework load. However, that lighter workload couldn't have come at a better time as work got kinda crazy all at once. So having a little less to work in the evenings after some very busy days has been great.
Valentine's Day was a nice, simple day for us. We ordered food and brought it home and watched a movie. I don't watch many movies while in school, so sitting a being able to watch one was fantastic. Nothing too extravagant, but it was just perfect. I had my husband-valentine and my pup-valentine...I am one blessed and happy lady:)
Other than that, things are just plugging along. Amazing how life's days are so filled yet there seems to be little going on, all at the same time. But I am trying to treasure these days of just normal busyness because as we all know, crazy happens so quickly. So I am trying to enjoy the feeling of "what do I do" because I am so used to having a to-do list that is so long I don't know where to start.
Well, I guess cleaning should be happening, since that is an ever-present need that always is on the list. Maybe I'll start on that...maybe :)
Happy Weekend!

I got your sh$# wired, Jack!
So we have been on a Duck Dynasty kick. HEY! The show is HILARIOUS. :) Check it out if you haven't yet and watch at least 2 episodes...then you will be hooked. It is just unbelievably funny. I received an email and this one line made me think of Duck Dynasty because Uncle Si always says "HEY JACK!"
I have no idea where the original credit goes for this email, but it was too good not to share with the masses...(be warned, there is profanity, but I think it helps add to the hilarity of it).
Enjoy, JACK!

Timmy Writes a Letter to Santa
Timmy: Dear Santa,
How are you? How is Mrs. Claus? I hope everyone, from the reindeer to the
elves, is fine. I have been a very good boy this year. I would like an X-Box
360 with Call of Duty IV and an iPhone 4 for Christmas. I hope you remember
that come Christmas Day.
Merry Christmas,
Timmy Jones
Santa: Dear Timmy, Thank you for your letter. Mrs. Claus, the reindeer and the elves are all fine and thank you for asking about them. Santa is a little worried all the time you spend playing video games and texting. Santa wouldn't want you to get fat. Since you have indeed been a good boy, I think I'll bring you something you can go outside and play with.
*Merry Christmas,*
Santa Claus
Timmy: Mr. Claus, Seeing that I have fulfilled the "naughty vs. Nice" contract, set by you I might add, I feel confident that you can see your way clear to granting me what I have asked for. I certainly wouldn't want to turn this joyous season into one of litigation. Also, don't you think that a jibe at my weight coming from an overweight man who goes out once a year is a bit trite?
Respectfully,
Tim Jones
Santa: Mr. Jones, While I have acknowledged you have met the "nice" criteria, need I remind you that your Christmas list is a request and in no way is it a guarantee of services provided. Should you wish to pursue legal action, well that is your right. Please know, however, that my attorney's have been on retainer ever since the Burgermeister Meisterburger incident and will be more than happy to take you on in open court. Additionally, the exercise I alluded to will not only improve your health, but also improve your social skills and potentially help clear up a complexion that looks like the bottom of the Burger King fry bin most days.
Very Truly Yours,
S. Claus
Timmy: Now look here Fat Man, I told you what I want and I expect you to bring it. I was attempting to be polite about this but you brought my looks and my friends into this. Now you just be disrespecting me. I'm about to tweet my boys and we're gonna be waiting for your fat ass and I'm taking my game console, my game, my phone, and whatever else I want. WHAT EVER I WANT, MAN!
T-Bone
Santa: Listen Pizza Face, Seriously??? You think a dude that breaks into every house in the world on one night and never gets caught sweats a skinny G-banger wannabe? "He sees you when you're sleeping; He knows when you're awake". Sound familiar, genius? You know what kind of resources I have at my disposal. I got your shit wired, Jack. I go all around the world and see ways to hurt people that if I described them right now, you'd throw up your Totino's pizza roll all over the carpet of your mom's basement. You're not getting what you asked for, but I'm still stopping by your crib to stomp a mud hole in your ass and then walk it dry. Chew on that, Petunia.
S Clizzy
Timmy: Dear Santa, Bring me whatever you see fit. I'll appreciate anything.
Timmy
Santa: Timmy, That's what I thought you little bastard.

Because you asked for it! (Chx Enchilada Dip!)
Are you ready for it?! So each year, my classic dish to bring to parties is chicken enchilada dip. It is a crowd-pleaser for sure...Never any leftovers! That's how I like it! :)
So if you are in need of a new recipe for this holiday season, new year's party, or super bowl party, this will definitely work for you. It isn't expensive, and it is so simple.
Enjoy!
Chicken Enchilada Dip
What You'll Need:
8 oz block cream cheese (I get the 1/3 less fat)
1/2 c. miracle whip (you can add more if you want it creamier)
8 oz sharp cheddar cheese (shredded or cubed)
2 large cans of chicken (they are about 12 oz cans), drained
4 oz can of diced green chili peppers (not drained)
1 small onion diced
1 glove garlic, minced (or you can use garlic powder)
southwest seasoning (I mix chili powder, crushed red pepper, and a little garlic salt)
Whatcha Gotta Do is:
Put all ingredients in the crock pot and cook on low for about 3-4 hours. When you season with southwest seasoning, start with less and add more to taste before serving. Stir frequently, if possible. Serve directly out of the crock pot while on warm with regular or lime tortilla chips. Enjoy!
Hint: I tried cooking it on high for shorter time, and it didn't turn out quite as good. So cooking it on low for about 4 hours, while stirring occasionally, makes it taste best in my opinion.

Advent of Crazy?
Dear Future Self,
Today, I sit here at my computer feeling like the world is going so fast around me and I am in slow motion. You know that feeling, future self, don’t you? The feeling that lines are blurring, and you standing there with your life circling around you, and it is going so fast you can hardly keep up. I think the Christmas season is like that for many of us. We have more gatherings, more cooking, more cleaning, and more crafting than we typically partake in for a whole year! The hustle and bustle is so fun, but it sure is overwhelming too.

I think the Christmas season is like that for many of us. We have more gatherings, more cooking, more cleaning, and more crafting than we typically partake in for a whole year! The hustle and bustle is so fun, but it sure is overwhelming too.
For this year, our first year being married, we are taking in all things us. We are going to our friend’s parties, we are creating our own traditions, we are enjoying decorating our first place together and are doing our shopping and crafting and preparations with feelings of excitement and newness. Having our first Christmas as a hitched woman is starting off great so far this season. Loving that there is going to be so much time to spend with those we love and care for. And, we are missing all those that we are not able to be with too. But, we will be sending our love and hopefully doing some Skyping too J (Future self, do you still use skype or has teleportation become the latest and greatest?)
So while I am here at my computer, looking at my calendar that is quickly filling and my to-do list is growing with little being crossed off yet, I am trying to focus on how awesome this time of year is. How grateful I am for this holiday season and all the life it brings to us. It stretches us and makes us do more with what seems like less time. So I am getting my list-making skills at the ready because its gonna be a busy but fun ride!
Basking in the holiday cheer,

Yup, I'm THAT girl.
I am that person. The one you go to a restaurant with and you change one or everything about an option on the menu to make it what you want or need it to be. I feel bad for the waiters and waitresses that have to wait on me. And I feel bad for my friends who sit there and have to listen to me say...once again..."I have a question about {this food item}". Thankfully, they are all really good sports and just give a good chuckle because I did it again.
When KGK and I went on our first date, we decided on the restaurant beforehand. In hindsight, I am very grateful for this simple fact. Many times, you may not know where the date may be, but for me, this was great.
KGK asked me to dinner. We went to this great spot that had a wide variety of food items to chose from: steak, chicken, salads, seafood..really a very large selection. For this, I am so glad. You see, when I go out to eat, I have these crazy food allergies and intolerances. And unfortunately, the list is quite extensive. So, before our date, I looked up the menu online (of which I am also very grateful for!) and scanned what I wanted ahead of time, so I didn't have to ask a thousand questions or take FOREVER to order. Don't want to come across as high maintenance or anything on our first time out! :) So on our date, I was able to order with no difficulty, made the impression I can scan a menu, order quickly, and don't get to know the waiter faster than the person you are on a date with because of all the crazy load of questions. Online menu= goal accomplished! I was one happy chick.
Thankfully, KGK is very helpful with checking to make sure all my allergies and intolerances are taken into account, now that we have been together and had many meals together. And our families and friends are also so wonderful to always check ahead of time to ask what I can or can't have. This is especially nice around the holidays were every type of dish under the sun is resurrected from the years past and feasted upon and about 80% of them have something in them I can't eat. I always say, please, don't plan around me. I will find something! But, they always check and they always make sure there is more than carrot sticks that I will be able to enjoy.
So today, in the spirit of thanks as Thanksgiving is upon us and food is ever-present on our minds, stomachs, and waistlines, I want to say THANK YOU to all my friends and family who constantly keep me in your thoughts when it comes to food. For many, this isn't even a glimmer of a thought. For me, it is every trip to the grocery store, every meal out, and every party where you feel like a goober for not trying the famous dish of the night. It can be embarrassing to say "no, I can't, but thanks anyways!". So thank y'all for being gracious and so thoughtful towards me! I appreciate it more than most people realize!

More than the Latest & Greatest
The Holiday season is upon us. For me, right now (and the past year as well), this means a mad rush around Thanksgiving to get my final projects, papers and assignments complete as the semester comes to a close. All the while, there is FOOD GALORE (yum!) and lots of cleaning and planning.
The fall is one of my favorite times of the year, but I love the excitement that comes with the holidays. I love making a list of what gifts to prepare and what meals I want to make. It is hard with schoolwork at the same time, but I really try to focus my energy towards getting meaningful and useful gifts for people and making recipes that are sure crowd-pleasers. There is nothing greater than giving a gift to someone that screams THIS IS SO YOU. I love it.
In addition, this is a great time of the year to help out others in need. Whether it be children overseas, those affected by the wrath of hurricane Sandy, or one of the people in your very own circle of friend or family that just need a pick-me-up. Even something as simple as donating blood...thank you iron count, I was good to go! I was able to donate today! :)
One blog I follow in particular does a great ministry every year to those who are in desperate need. I have not been following this blog for long, but Glennon, the writer, and her "Monkee" friends, have created such an amazing community to help those who need more than the latest gadget or gizmo for the holidays.
Check out how to give through her site here or find your own that is close to your heart, but be sure to find time this holiday season for giving more than the latest and greatest. Find time to think of someone who truly needs something and enjoy that you have blessed someone with something that they truly need.
